Firstly, a cold maceration was carried out between 8 and 12 hours. After pneumatic pressing, low-temperature alcoholic fermentation took place in stainless steel tanks; the wine remained on its fine lees until the moment of clarification.
A suggestive and very pleasant wine, with a certain unctuousness and everything that can be asked of a Verdejo in terms of freshness, good acidity, herbal and floral aromas, and the characteristic bitter touch.
