Appearance: Colour: Cherry red with a high layer and a violet rim. Harvest: The grapes that give rise to this wine come from vineyards where they work in a balanced, respectful and sustainable way. Harvest in boxes at the end of October 2017 with a selection of bunches at the entrance to the winery. Vinification: Long and peculiar elaboration with phases of cold pre-fermentation maceration and brief alcoholic fermentation at low temperatures. After this stage, the wine undergoes malolactic fermentation in first-use French oak barrels. Ageing: 6 months of aging in first-use French oak barrels. Bottled: the clarification, stabilization and filtering processes are carried out in the most respectful way possible to preserve its characteristics as much as possible once bottled.

Elaboration
Made with our best selected grapes from our least productive vineyards over 40 years old. The varieties are vinified separately to obtain all their qualities. Subsequently, the coupage is carried out before resting in American and French oak barrels where it is integrated and assembled with the wood for 14 months and rests for a minimum of 7 months in the bottle before going on the market.
