The grapes with which we have made this exclusive wine come from Monastrell vines that are over 50 years old from El Algaiat and La Canalosa in Alicante. Strains traditionally grown in glass and dry land on terraces with dry stone margins, a technique declared an intangible heritage of humanity by Unesco. These are places with an extreme dry climate and where the yield per hectare does not exceed 3,000 kilos of grapes, so the concentration, maturity and flavor of the grapes is extremely intense. Some vines that have been saved since they were about to be uprooted due to their low yield and age. Very careful elaboration, based on a strict selection of the grapes in the vineyard, with harvest in boxes, pre-fermentation cryomaceration in the winery, passing through the selection table, for a subsequent long maceration aimed at the extraction of all the richness that these grapes contain. A patient aging in French oak for 12 months and its subsequent stay in the bottle allows this wine to ripen over low heat.
Tasting note
Red wine that stands out for its cherry red color with a garnet rim. On the nose, its aroma is reminiscent of overripe fruit, creamy oak, as well as being warm and very toasted. In the mouth its flavor is confit and very powerful with sweet tannins.
