The grape from which Edoné Gran Cuvée is born comes from the El Moralejo estate, which surrounds the winery, located about 1,000 meters above sea level. When it arrives at the winery, the grape is pressed very softly, thus obtaining a very pure and sugar-rich must. A first fermentation process is carried out in small tanks, a process that later continues in French oak barrels. The 5% in the base wine is pre-aged in 225-liter French oak. Following the traditional methodology, ultimately a second fermentation takes place in the bottle that lasts about 40 months.
